Muri is a typical puffed rice from Odisha and West Bengal as it is the base of many street snacks and culinary recipes. You can also find it with other names such as puri, mudhi, murmuri, and pori.

 

Originally, it was used only for festivals and as offerings to gods, but today it is also consumed. It is excellent to enjoy for breakfast, it is perfect as a substitute for bread in the form of rice cake and it provides very few calories.

 

Although we are used to buying it already packaged, you can also do it at home. Of course, the homemade puffed rice preparation is not among the fastest, but it will be worth it and here I will give you two ways to do it.

Ingredients:

  • 1 cup (200 g) of rice (whatever you have at home including sushi rice, refined ones, or brown rice).
  • 1 3⁄4 cups (410 ml) of water.
  • 1 to 2 pinches of sea salt.
  • Sunflower, vegetable, or canola oil.

Preparation:

  1. Clean the rice (wash it until the water is clean) and hydrate it by placing it in a bowl of clean water for 10 minutes.

  1. Boil the rice. Cook it on low heat for 30 minutes. Now, add the pinch of salt (you can replace it with sugar). When the rice has absorbed all the water, remove it from the heat.

  1. Now you must dry the rice. Place the rice on a clean cloth or towel on the table and spread it out well. It should dry overnight. If you can't wait, you can place it in the oven for 50 minutes at 50 ° C or 121 ° C for 2 hours on low heat.

  1. Time to fry the rice. Pour the oil into a saucepan and heat it to 191 ° C. Put enough oil over medium-high heat until it reaches that temperature. Now place the rice. Depending on the type of rice, it may take 10-15 seconds for them to puff. If it takes longer than that time, you may need to wait for the oil to get even hotter.

 

Tip: Use a pot that is comfortable enough to fit a fine mesh strainer to place the rice there. This will make it easier to remove the puffed rice from the oil.
